Dwaeji Gukbap, or Pork Rice Soup, is Busan's best-known speciality, familiar to people of all ages. The actual origin of this meal is uncertain; however, it is usually assumed that it is a byproduct of the Korean War's aftermath rather than a native delicacy that formed organically in the region. Pork bones are braised for hours for the milky broth served in a Korean clay pot containing rice and glass noodles. The Gukbap bowl is then topped with thick pork slices.

"Milmyeon (Cold Wheat Noodles)"

Milmyeon is a cold noodle dish that Busan locals love throughout the summer. The chewy noodles are formed by pressing dough made from wheat flour or a wheat flour and starch combination onto a noodle mold. Milmyeon comes in two versions: wet (Mul Milmyeon) served in icy cold broth and dry (Bibim Milmyeon), combining the spicy gochujang sauce with the noodles.

Bibim dangmyeon is another unique dish that can only be found in Busan, made of boiling glass noodles served with spicy sauce and a variety of toppings. It is thought to have evolved from the practice of preparing noodles using starch powder collected from sweet potatoes during the Korean War, when food was limited. Today, it is a simple dish, appealing to those preferring food served quickly and eaten instantly.

"Eomuk (Busan Fish Cake)"

In Korea, fish cakes are a popular street snack, made of different ground white fish that have been fried after being formed into various shapes. Busan, the nation's largest port city, has an abundance of fresh seafood, and it’s why Busan fish cake is regarded as the best of its kind, with a higher fish content and a lower flour mixture. Eomuk is typically sold by street vendors on a skewer boiled in the hot broth. Dried fish flakes or crabs are used to flavor the soup together with radish.

"Hoe (Sliced Raw Fish)"

One of the staple dishes in Busan is sliced raw fish, often known as sashimi or "Hoe" in Korean. You start with two options for dipping sauces. You can dip in cho-gochujang, a Korean red pepper paste vinegar sauce, or wasabi and soy sauce. Additionally, in restaurants, hoe is usually presented as a course meal. While Gukje Market and Kkangtong Market are two well-known markets in Busan, Jagalchi Market offers the widest variety of raw fish and seafood.
