One of must-try dishes in Phu Quoc must be grilled sea urchin, which has soft yellow meat in its shells when opening. The local people usually cook it into porridge, soup, fried rice, salad,… especially grilled with grease and onion – the most favourite dish. They will remove the thorns of fresh sea urchins first. Then the sea urchins will be cut in half, washed and drained then topped with grease, spring onion. After being grilled on hot charcoal, sea urchins smell so aromatic. If you prefer the more tasty flavour, a fresh chicken egg can be added in the urchin mixture. Sea urchins do not take a long time to be done. Let’s take a spoon of this savoury dish then enjoy with a mixture of salt, black pepper and lemon juice. "Tram Mushroom "

Tram mushroom is a kind of seasonal mushroom which only grows at the beginning of the rainy season (March, April every year) in Phu Quoc’s mangrove forests. This is a special mushroom whose flavour is slightly bitter at first taste but freshly sweet afterwards. Tram mushroom also has some medicinal attributes and local dishes which are usually cooked with it can be listed such as chicken soup, cha ca, broth with fish, shrimp or squid, etc.
